ERICK'S FAVORITE RICE PUDDING


 

1/4 tsp. salt
2 1/2 c. milk, scalded
1/2 c. raisins
cinnamon

1/2 c. water
1/2 c. uncooked instant rice*
3 eggs, slightly beaten
1/2 c. sugar
2 tsp. vanilla



Heat oven to 350. Heat water to boiling. Remove from heat; stir in rice. Cover and let stand about 5 minutes. Blend eggs, sugar, vanilla & salt. Gradually stir in milk. (I add a few shakes of cinnamon to this mixture also, cause we like cinnamon). Mix in rice & raisins. Pour into ungreased 1 1/2 qt. casserole; (I always double and use 2 1/2 qt. casserole), sprinkle rice mixture with cinnamon. Place casserole in square pan or 9 x 13 and pour very hot water into pan. Bake about 70 minutes or until knife inserted
halfway between center and edge comes out clean. (Will take about 1/2 hour longer if doubled). Remove casserole from water. Serve pudding warm or cool. If desired, serve with whipped cream. 6 servings. * If you want even more nutrition, use brown rice, enough to have 1 1/4 cups rice once cooked, or 2 1/2 cups if doubled.

Note: This was Erick's favorite thing to eat. We adopted it as our Christmas Morning Breakfast, which was made the night before, then kids could eat in morning, and I didn't miss anything being in the kitchen. I still get asked everywhere I go to bring this to any dinners.

DAVID'S BEST PUMPKIN PIE
 

 

1 c. sugar
2 frozen pie crusts
Cool Whip or ice cream

1 can pumpkin
1 bottle pumpkin pie spice
1 can evaporated milk


Preheat oven to 350. Mix pie filling and pour into pie crusts. Bake for 30 minutes or until brown on top. Cool. Top with Cool Whip or ice cream.

Note: Instead of a birthday cake, David wanted pumpkin pie instead!
