    ARLYN'S EASY VEGETABLE CASSEROLE

 

1/2 c. shredded cheddar cheese
1/4 c. chopped onions
1/4 c. chopped green peppers
1/4 c. chopped celery
1 pkg. Ritz crackers
1 (8-oz.) can carrots
1 (8-oz.) can cream of celery soup
1 (8-oz.) can French-style green beans 1 (8-oz.) can shoe peg corn
1 (8-oz.) lite sour cream





Combine all ingredients except topping into a bowl and stir. Pour mixture into
casserole dish. Sprinkle crushed cracker crumbs over top. Bake at 370 for 40 minutes or until golden brown and bubbling.

Note: Arlyn ate this recipe at her Aunt Rebecca's and loved it.

ALICIA'S BABA'S POTATO PIEROGIES

Pierogi Dough

 

1/4 c. vegetable oil
2 c. warm water
5 1/2 c. all-purpose flour

Mix warm water, flour and oil together until it forms a soft dough Cover and let stand at room temperature for 15 - 20 minutes.

Potato Filling

4 c. mashed potatoes
salt & pepper to taste
Cheez Whiz* to taste
diced onion sauteed in butter
dollops of sour cream




*Instead of Cheez Whiz, you can use dry cottage cheese pressed through a sieve, which is traditional Ukrainian cheese for pierogies. After dough stands 15-20 minutes, roll out to 1/8" thickness and cut into 2 1/2" circles, or however big you would like the pierogies. Place a teaspoon full of potato filling on dough and fold over in half. Pinch edges together well to seal. Have a large pot of salted water boiling. Drop pierogies into boiling water. Boil for 10 minutes, or until the pierogies float to the top. Drain. Serve pierogies topped with diced onion sauteed in butter and a dollop of sour cream on the side. Enjoy!

Note: This was Alicia's all time favorite food! She could eat 12 pierogies for lunch. These come from our Ukrainian heritage. She loved all Ukrainian food and could eat plenty of it without putting on the weight like her mom.
