ADAM'S BACON CHOPS

1 c. grated cheese
1 can tomato sauce (or ketchup)
4 quarter lamb chops
1/2 pkg. bacon

Pour a good coating of tomato sauce over the chops to cover the chops evenly. Place bacon over chops and sauce. Cover bacon with more tomato sauce. Sprinkle grated cheese over all. Cook at 350° for 45 minutes to an hour.
Note: I got this recipe from my first husband's mother. When I met Adam, I cooked it for him and he loved it. It was one of the few things I cooked that he did like.

ALLEN'S TASTY TACOS

floured taco shells(small or medium)
chopped lettuce
tomato
shredded cheese(I use Kraft Mexican)
1-lb. lean ground beef
1 sm. onion
1/2 sm. container sour cream
1 can refried beans
3 T. taco sauce

Cook hamburger and chopped onions until done. Drain all of the grease. Add the sour cream, refried beans and taco sauce. Simmer on low until mixture is warm. Brown the taco shells over burner on stove, gas or electric until toasted to your taste. Add the hamburger mixture. Then put on the cheese, lettuce, and tomato.

Note: Depending upon the amount of meat mixture you use, this should make between 8 or 10 tacos.

TOMMY'S SCRAMBLED EGGS, BACON & GRAVY
(OVER BISCUITS)

milk for thinning gravy
1 doz. eggs
 salt and pepper to taste
biscuits - homeade biscuits are best
1 (16-oz.) pkg. bacon
cube of margarine
1 can evaporated milk for best flavor
(whole or 2% milk can be used)

margarine, add flour to margarine to make a thick paste. Add 1 can evaporated milk ( for a richer flavor or you can use regular milk or 2%) and 1/2 can water. Stir over medium high heat. As it thickens, add regular milk to make a gravy-like consistency. (Depends on how thick you like your gravy) Take off burner and set aside. Beat eggs, add them to a pan and scramble. Once eggs are done, add bacon and eggs to the gravy. (At this point you can still add milk to thin your gravy....it thickens as it sets.) Add salt and pepper to taste as you are cooking. Throw some biscuits in the oven and bake them (homemade biscuits are better). Once biscuits are done, split them open,
put a whole biscuit on a plate and cover with the gravy, bacon and egg .

I will not try to hide or walk around it.  I will walk through the center of my sorrow and I will emerge - proud and strong.
