TARA'S ABSOLUTE BEST BLUEBERRY MUFFINS


 

dash of salt
1/2 c. milk
2 1/4 c. blueberries
1 stick butter (1/2 cup)
1 1/4 c. sugar
2 eggs
2 T. baking powder



Preheat oven to 375°. Cream butter with sugar, beat in eggs. Stir together flour, baking powder, salt in separate bowl. Add alternately with milk to creamed mixture, stirring as little as possible. Fold in blueberries. Put in muffin tins, sprinkle tops with sugar. Bake 20 minutes or until lightly browned. Makes 12 muffins.

Note: It was Tara's job, as a little girl, to clean and stem the blueberries while I got the rest of the ingredients together. I had to buy two pints of blueberries because she would eat as many as she put in the measuring cup. I hope there are blueberries in heaven!!!
