                   CHRIS' FAVORITE NO BEAN CHILI DIP

1 (8-oz.) pkg. cream cheese
(6-oz.) shredded mozzarella cheese
1 can no bean chili

Spread cream cheese in a pie plate or same size casserole dish. Spread no bean chili on the top. Sprinkle shredded mozzarella cheese on top. Bake until melted and bubbly. Serve with crackers or nacho chips.

Note:
My son Chris was so picky we couldn't believe he liked this. It is called Chris' dip. It is no bean chili dip.

COLLIN'S CRACKER SPREAD

1 (8-oz.) pkg. cream cheese, softened to room temperature
1 pkg. Hidden Valley Ranch dressing mix

Mix together, spread on crackers or pieces of bread for an appetizer. Recipe will have a better flavor if allowed to blend in the fridge for a few hours before serving.

COLLIN'S DILLY MAYO

1 c. mayonnaise                                   1 tsp. dill weed (to taste)
2 tsp. mustard

Mix all ingredients together. Use as a sandwich spread - works best with ham or hand cut turkey. Spread will have a better flavor if allowed to blend in the fridge for a few hours before serving.

                    CHAD'S HOT BUTTERED RUM

2 tsp. ground nutmeg
2 tsp. cinnamon
rum (I use spiced rum)
1 lb butter, softened
1 lb light brown sugar
1 lb powdered sugar
1/2 gal. vanilla ice cream






Allow ice cream to soften, but not completely melt. Add butter to ice cream and mix. Gradually add sugars to ice cream mixture, add spices and mix well
(a heavy duty electric mixer works well). Freeze. To serve: Boil water. In a mug, put 2 tsp. (or more) of the frozen mix and one jigger of rum. Add hot water, stir and enjoy!

CHAD'S HOT CHOCOLATE MIX

1 1-lb. box Nestle's Quik
1/2 c. cocoa
1-lb. powdered sugar
 
(14-oz.) non-dairy creamer
1 tsp. salt
1 box powdered milk (8 qt. size)
 

 

 

In a large bowl sift the Quik and cocoa together and mix. Sift in the powdered sugar, creamer and salt and combine with the other ingredients. Sift in half the powdered milk, mix, sift in the rest of the powdered milk and mix well. To make a cup of hot chocolate, mix 3 T. of mix with one cup hot water. Enjoy!

Note: Chad loved hot chocolate made this way. It is very easy to make and makes a large amount. It makes a great gift!
