DEREK'S GREAT GREASY TACOS

 

1 can refried beans
grated mild cheddar cheese
sour cream (optional but Derek loved it)
oil
1 doz. yellow corn tortillas (or white, your preference)
1-lb. hamburger
1 pkg. Taco seasoning (season to taste)



 

Break up hamburger and sprinkle taco seasoning (to taste) and brown in skillet. In a saucepan or skillet, warm up refried beans (I always add a little of the grease of the hamburger) Drain hamburger fat either in colander, on paper towels, or place a paper towel into the pan to soak extra grease. You can add a small amount of water after the hamburger is browned and let sit on simmer to keep meat warm. You can also add more seasoning with the water if you like more flavoring. While browning hamburger, add oil in saucepan round enough for tortillas to fit. Have about an inch in the pan. Heat the oil first on hot and then set temp to simmer. Place one tortilla in at a time, turn after about 15 seconds to other side just long enough to soften tortilla and then fold in half in pan and turn again. With prongs, pick up tortilla and drain into pan then place on paper towels or napkins. Repeat until all tortillas are cooked. If you like crunchier shells, you can leave in longer with a little higher heat. When tortillas, hamburger, and refried beans are cooked, make sure you have enough grated mild cheddar cheese. Take tortilla, smooth some refried beans, sprinkle cheese, add hamburger, and top with sour cream. Serving size depends on how many you eat.

Note: These are very greasy but tasty! Derek loved to show off his greasy hands!

DEREK'S GRANDPA'S HOT MEAT

tabasco, (depends if you like mild or hot)
onion ~ diced (to taste)
salt and pepper to taste
peppers ~ diced
pork chops or pork steaks, cut into little pieces
can tomato sauce
(4-oz.) can tomato paste (part of can) flour tortillas




 


Put tomato sauce, some tomato paste, salt, pepper, and peppers (diced), and onions on big pot and simmer. Brown pork cubes including the bones and fat for taste. Put into sauce, making sure you don't add bones or extra fat that has been cooked. Let simmer for several hours until pork is very tender (I usually cook it about 3 to 4 hours). Warm tortillas (I just put the bag in the microwave for about a minute or so to soften and warm them). Time will depend on how many tortillas are in the package. Tear wax paper in about 8-10 inch pieces. I put them in a pile. Put a flour tortilla on wax paper, put about a tablespoon of meat and sauce on the middle of the tortilla, wrap like a burrito, roll wax paper and twist the ends. It doesn't take much meat and sauce, they are filling.

Note: This was my dad's specialty and I took over after he passed on. I always made a lot of Dad's Hot Meat because my family loves to eat these for days!
