 KEVIN'S BEEF & BEER


 

1 beef-flavor bouillon
1 bay leaf
salt to taste
pinch thyme leaves
pepper, to taste
2 T. red wine vinegar

6 slices bacon
3-4 large onions, sliced
3 lbs. beef stew meat, cut into chunks
salad oil
2 T. flour
1 (12-oz.) beer
1 c. water





Cook bacon in skillet until brown, remove, crumble and put into 3-qt. casserole. Cook onions in bacon drippings until browned, stirring often. Remove and place in casserole. Brown beef in skillet with drippings, adding oil if necessary. Cook until browned, a few at a time. Add to casserole. In skillet, over medium heat, add 2 Tbs. flour to oil; cook oil and flour until browned, stirring constantly. Gradually stir in beer and remaining ingredients except vinegar; cook until thickened. Add to casserole. Bake, covered in 350° oven for about 2 hours or until meat is tender. Spoon off fat. Stir in vinegar. Serves 5-6. Good with mashed potatoes or egg noodles.

Note: Kev used to love this simple dish and requested it often--great "comfort food".

KELLY'S BUG-OO-BO-ITS
(BBQ Spareribs)

2 T. brown sugar
1 T. vinegar
1 clove garlic
dash liquid smoke
salt and pepper (optional)

2-3 lbs. pork ribs, boneless
1 c. ketchup
1 c. water
4-5 stalks celery
1 No. 2 can onion






Brown ribs on all sides. In blender, mix all other ingredients. Place ribs in large oven proof pan, pour sauce all over, cover, put in oven at 375°, for about an hour and a half, or until meat is tender and sauce thickens. May need to add water while cooking. When meat is tender, remove lid, and cook until sauce is thick, not watery.

Note: I always made mashed potatoes with bacon bits and corn or green beans with this. Kelly loved this recipe, but had some trouble saying the name, hence, Bugooboits; we still call it this to this day.
