MARKIE'S CREAMY, CHEEZY GOULOSH

 

4 cans Campbell's tomato soup
2 boxes (med.) shell noodles
3 lbs. ground round burger
1 lg. onion (diced)
1 4 lb. block of Velveeta cheese



Chop cheese into small bite size squares for easy melting, cover and set aside. Boil water in large 4-5 qt. sauce pan. Add shell noodles (cook until tender), rinse and set aside. Brown ground beef and onions until meat is browned throughly and onions are tender (drain fat). SLOWLY, add cheese to burger a little bit at a time over med/low heat, stir constantly until cheese is melted. Continue adding cheese until ALL cheese has been completely melted and burger sauce is creamy. Add tomato sauce, stirring constantly until completely mixed. Let simmer over very low heat, stirring occasionally. Add sauce mixture to cooked shell noodles and mix well. Serve with
applesauce or cottage cheese. Serves: 1 Large Family!

Note: Markie loved this dish, and was always his second choice when asked for meal ideas. CAUTION : This is very filling, so unless you have a good sized appetite, I would start out with a small portion.

MARK'S FAVORITE SPANISH RICE

1 lg. green pepper, chopped
2 (29-oz.) lg. cans of tomato sauce
1 (15-oz.) med. can of stewed tomatoes
6 c. water
6 c. rice
3 lb. ground beef
1 lg. onion, chopped






Boil water in lg. 4-5 qt. sauce pan. Add rice, cover, set aside. Brown ground beef, onions and green peppers until meat is browned thoroughly, and onions and green peppers are tender. Add tomato sauce and stewed tomatoes to meat and veggies. Stir well, and let simmer. Add sauce mixture to rice, mix well, and serve. Serves: 1 lg. family!

Note: My last memory of Mark eating Spanish Rice was approximately 2 weeks before he died. He smothered his Spanish Rice in hot sauce, smashed it down like a pancake and ate it in slices.
